Saganaki

A Greek flaming cheese appetizer

Ingredients

  • Kasseri cheese (1/3 to 1/2 thick slice per person)
  • 1/2 lemon
  • egg
  • 1 jigger Metaxa
  • flour

Instructions

  • Dip cheese slices in beaten egg, then dredge in flour
  • Fry in butter, turning twice
  • Keep warm
  • When all slices are done, pour Metaxa over them and flame it
  • Put flames out by squeezing lemon juice over them
