Caesar Salad

(from Denise’s recipe notebook)

Ingredients

(Serves six)

  • 4-5 cloves of garlic
  • 1/2 cup salad oil
  • 1 bunch romaine lettuce
  • 1 head lettuce
  • 1 egg beaten
  • 1/2 cup grated Parmesan cheese
  • 1/4 crumbled bleu cheese
  • 1 teaspoon Worcestershire sauce
  • Croutons
  • 1/2 teaspoon lemon pepper
  • 4 tablespoons lemon juice

Instructions

  • Mash garlic in bowl with lemon pepper
  • Add oil and let stand at room temperature for 2-3 hours
  • Wash and dry lettuce. Tear into bite size pieces and chill
  • When ready to serve: mix lemon juice, Worcestershire and salt to taste
  • Strain oil through coarse sieve over salad and toss
  • Add the beaten egg and toss until no trace of the egg is left
  • Sprinkle with lemon juice mixture, add cheeses and toss again
  • Add croutons and toss lightly
  • Serve immediately
