This is the recipe for the traditional, internationally famous Mayoff Day Cookies, courtesy of Denise Mayoff
(May actually be eaten at any time of the year, but if you only cook for special occasions, this is the appropriate time!)
- 1 1/2 cups butter or margarine, softened
- 2 cups sugar
- 2 eggs
- 2 tsp vanilla extract
- 2 cups flour
- 3/4 cup cocoa
- 1 tsp baking soda
- 1/2 tsp salt
- 1 2/3 cups (10 oz pkg) Reese’s Peanut Butter Chips
- Heat oven to 350 F.
- In large mixer bowl, beat butter and sugar until light and fluffy.
- Add eggs and vanilla; beat well.
- Stir together flour, cocoa, baking soda, and salt; gradually blend into butter mixture.
- Stir in chips.
- Drop rounded teaspoonfuls onto ungreased cookie sheet.
- Bake 8-9 minutes (do not overbake; cookies will be soft. They will puff while baking and flatten while cooling).
- Cool slightly (one minute); remove from cookie sheet to wire rack.
- Cool completely.
Makes about 4 1/2 dozen large cookies, or about 9 dozen average-sized ones. I make the small ones because they stay softer longer.
